Cuban Pork/Chicken with Mojo Sauce

- Ingredients - (serves 6)

  2 lbs. boneless pork loin roast (or chicken)
  1 cup extra virgin olive oil
  14 cloves of crushed garlic
  1 cup key lime juice
  1 tsp. ground black pepper
  1 tsp. salt
  1 1/2 tsp. cumin

- directions -

Preheat oven at 350°.  Place the garlic & olive oil in a 1 qt. pot.  Over medium-low heat, gently sauté the garlic until soft.  Add lime juice & spices.  Bring sauce to a boil.  Reduce heat, cover and simmer for 5 minutes.
Place the roast in a covered ovenproof casserole.  Pour 1 cup of the mojo sauce over the pork.  Cover and bake for 1 hour.  During cooking, baste the roast twice.  Remove from oven and shred the pork with 2 forks.  The loin should easily fall apart.  Add more mojo if necessary.   Excellent with yellow rice & black beans. 

Smoked Pork Chops, Baked with Jiffy BBQ Sauce

- ingredients -
6 smoked pork chops
1 can whole kernel corn
1 egg, well beaten
1 cup chopped celery
1 onion, chopped
1 ounce butter
1 green sweet pepper, chopped

- directions -

Sauté celery, onion and sweet green pepper in butter, and mix with corn and egg. Brown chops lightly in oil, drain and arrange in a casserole dish. Cover with the corn mixture and pour on the BBQ sauce, (below), all over. Bake covered at 350 for one hour. Remove cover during the last 10 minutes.

Jiffy BBQ Sauce

- ingredients -
1/2 cup tomato ketchup
1 tsp. dry mustard
1 tsp. hot pepper sauce
2 tsp. mango chutney
2 tsp. Pickapeppa Sauce *
liquid from the can of corn & water to make 3/4 cup

- directions -
Combine all ingredients and pour over pork chops.
