Smoked Pork Chops, Baked with Jiffy BBQ Sauce

- ingredients -

6 smoked pork chops
1 can whole kernel corn
1 egg, well beaten
1 cup chopped celery
1 onion, chopped
1 ounce butter
1 green sweet pepper, chopped

- directions -

Sauté celery, onion and sweet green pepper in butter, and mix with corn and egg. Brown chops lightly in oil, drain and arrange in a casserole dish. Cover with the corn mixture and pour on the BBQ sauce, (below), all over. Bake covered at 350 for one hour. Remove cover during the last 10 minutes.

Jiffy BBQ Sauce

- ingredients -

1/2 cup tomato ketchup
1 tsp. dry mustard
1 tsp. hot pepper sauce
2 tsp. mango chutney
2 tsp. Pickapeppa Sauce *
liquid from the can of corn & water to make 3/4 cup

- directions -
Combine all ingredients and pour over pork chops.
